Roasted and Glazed Butternut Squash

This side dish compliments your roast, or can be part of a vegetarian/vegan meal. Either way, it is a tasty addition to your repertoire.

  • 1 large butternut squash, peeled, seeded and cubed
  • 3 tablespoons olive oil
  • 3 tablespoons Antelope Creek Farm Dressing & Cooking Sauce, such as apricot or your favorite flavor
  • 1/4 teaspoon sugar
  • 1 tablespoon fresh rosemary, chopped

Spread squash cubes on a baking sheet. Mix together olive oil and Antelope Creek Ranch Dressing & Cooking Sauce, drizzle over the squash. Sprinkle with sugar and fresh rosemary. Toss all together and bake at 450 degrees for 20 minutes or until glazed. Stir several times during cooking.
